Today Aceto Balsamico di Modeno is readily available and more widely used but it does not follow the traditional methods of production and is essentially a watered-down version. The traditional balsamic is listed under the EU’s protected designation of origin label, along with Champagne, Gorgonzola and Parmigiano-Reggiano, to name a few.
